🥗 Recipe of the Week

Mushroom & Caramelized Onion Quinoa Bowl
This warming, fiber-rich bowl is both gut-friendly and comforting.

Ingredients:
• 1 cup uncooked quinoa
• 1 tbsp olive oil
• 1 yellow onion, thinly sliced
• 2 cups mushrooms (shiitake, cremini, or button), sliced
• 2 garlic cloves, minced
• 2 handfuls of spinach or kale
• Sea salt and pepper to taste
• Optional: fresh thyme, nutritional yeast, or tahini drizzle

Instructions:

  1. Cook quinoa per package directions. Set aside.
  2. In a skillet, heat olive oil and caramelize onions (20–25 min).
  3. Add mushrooms, cook until soft. Add garlic and stir for 1 min.
  4. Stir in greens to wilt. Season with salt, pepper, and thyme.
  5. Serve over quinoa. Top with nutritional yeast or tahini if desired.
