🥣 Recipe of the Week

Golden Turmeric Lentil Soup
This warming, anti-inflammatory soup is rich in fiber, plant-based protein, and healing spices.

Ingredients:
• 1 tbsp olive oil
• 1 yellow onion, chopped
• 2 garlic cloves, minced
• 1 tsp ground turmeric
• ½ tsp ground cumin
• 1 cup red lentils, rinsed
• 4 cups vegetable broth
• 1 medium carrot, chopped
• 1 cup coconut milk (optional)
• Salt and pepper to taste
• Fresh parsley and lemon for serving

Instructions:

  1. In a pot, heat olive oil and sauté onion until soft. Add garlic and spices.
  2. Stir in lentils, carrot, and broth. Bring to a boil, then reduce heat and simmer 20–25 minutes.
  3. Optional: stir in coconut milk at the end for creaminess.
  4. Season to taste and serve with fresh parsley and lemon juice.

Holistic Note: This recipe supports physical wellness (anti-inflammatory, high-fiber), emotional wellness (comforting), and spiritual wellness (nourishing warmth for body and soul).
